HEAD BREWER: Justin Fox
Justin’s love of beer stemmed from a few nomadic years travelling to around 30 different countries and with beer the consummate staple to the traveller, the exposure to a mass of variety / range of styles captured his undivided “beer” attention.
On return to Australia, Justin was introduced to the world of brewing by the beer maverick himself, Richard Moroney, over lazy days at the Sail and Anchor Pub Brewery and he became an Assistant Brewer to him when Richard opened “The Monk” in Fremantle. In 2008, Justin was appointed The Monk’s Head Brewer and later that same year he completed a Graduate Diploma in Micro Brewing at Edith Cowan University under the watch of Western Australia’s leading beer sage Hugh Dunn.
Justin remained at The Monk for the next 4 years and his tenure culminated in a nomination for Champion Exhibitor at the Australian International Beer Awards in 2011. In June 2012, Justin moved to The Swan Brewery to hone his trade at the other end of the production scale and took up a role of Technical Brewer for a brewery where each vessel can hold 1.3 million pints of beer! However, Justin maintained his passion for the craft brewing movement throughout his role with Swan becoming part of the Malt Shovel brew team looking after brewing duties at The Generous Squire (brewpub) in the Perth CBD.
With Swan’s owner, brewing giant Lion, flagging the closure of The Swan Brewery last year, Justin seized the opportunity to once again ignite and share his passion for craft beer and joined the team at Colonial Brewing Co in the role of Head Brewer. Justin is looking forward to helping Colonial Brewing Co continue on its strong successes in the craft beer industry and brewing top quality beers for all!
